Does anyone know a recipe for Laffarga Fish? This is a dish that is popular in Rocky Point Mexico. Thanks?

I know that it is a breaded flounder with a green pepper cream sauce and cheese. I also know where in Mexico to get it but I now live in MN and trip there is impossible. Anyone have a recipe??

  1. I found the Laffarga is translated into English as flounder and is actually spelled "La Farga".  There is a place in Rocky Point, Mexico where their house special is "La Farga smothered in cheese sauce".  Hope this helped.

    Fried Flounder with Green Peppercorn Sauce.

    2 1/2pounds flounderpieces

    Salt and pepper to taste

    2 eggs

    1/4 cup milk

    1 cup all-purpose flour

    2 cups Japanese panko breadcrumbs or other breadcrumbs

    1 cup vegetable oil (for frying)

    Season fish with salt and pepper. Lightly beat together eggs and milk. Set up three bowls: flour, egg mixture and half the panko. Dip each piece of fish into flour, shaking off excess. Next, dip into egg mixture, allowing excess liquid to drip off. Finally, dip in crumbs, coating well on all sides. (Add second half of panko to bowl as needed, so crumbs stay dry.) Arrange fish on a waxed paper-lined baking tray and chill for at least 30 minutes or overnight.

    In large, heavy skillet, heat half the oil until shimmering. Lay fish pieces in oil without crowding, turning pieces as they brown. Fry until firm and well-browned, about 6 minutes; repeat with remaining fish. Transfer to platter. Tent with foil to keep warm. Pour off excess oil from skillet. Add 1 1/2 cup whipping cream and  1/2 cup vodka and boil until slightly thickened, about 4 minutes. Add 2 tbs green peppercorns (in water, drained and crushed) and 4 tablespoons butter and stir until butter is just melted. Mix in 3 tbs fresh lime juice, season with salt and pepper. Spoon sauce over flounder and sprinkle with Cojita cheese and fresh snipped cilantro.
