I've heard good things about CCS. However, they're pretty expensive. If you're looking for a good organization to volunteer with for less money, check out Global Volunteer Network. They're based out of New Zealand but it doesn't matter where you're from. The prices are by far the best I've seen and there are lots of opportunities.

i agree with what the others have mentioned but if you do decide to join CCS, the Tanzania program sells out the fastest! good luck.
