Question:

Does anyone know any good vegitarian recipes?

  1. i've found some good meals just by randomly mixing stuff together that i had in my pantry/fridge.  last night i made mushroom risoto (just a box mix) and i added cream of mushroom soup, a can of peas, can of black beans, can of diced tomatos, frozen spinach... and mixed it all together. i baked it a few minutes and put some cheese on it and it was delicious!!!  you could of done the same with regular rice instead of risoto and various veggies.  i'm also a fan of salsa... you can add it to almost anything to kick it up a notch and make it taste great!


  2. Moroccan Stew

    1/4 cup water or veggie broth for sauting + 1 to 2 cups for stewing vegetables in

    Two large onions, chopped

    Four cloves garlic (large cloves, mash these)

    1 teaspoon ground cumin

    1 teaspoon tumeric

    1/2 teaspoon cinnamon

    1/4 to 1 teaspoon cayenne

    1/2 teaspoon paprika

    2 diced sweet potatos

    2 diced zuccini

    2 diced summer squash

    1 diced carrot

    2 diced tomatoes

    1 diced bell (green) pepper

    2 or 1 (depending if you like the buggers) cans garbanzo beans (drained)

    raisins (however many you like, I used a cup of raisins).

    Saute onions, garlic and spices in water or veggie broth.

    Add sweet potatoes, zuccini summer squash and carrots.

    Let stew.

    Add water as necessary.

    Add tomatoes, bell pepper and garbanzos.

    Let stew.

    Add raisins.

    Cook until potatoes are mushy or done to your liking (about 30 minutes).

    Serve over couscous or rice. Servings: a lot!

  6. This is one of my favorites but it is a heavy curry so I usually make it in the fall and winter

    Marrakesh Vegetable Curry

    Servings: 6

    Ingredients:

    1  sweet potato, peeled and cubed

    1  medium eggplant, cubed

    1  green bell pepper, chopped

    1  red bell pepper, chopped

    2  carrots, chopped

    1  onion, chopped

    6 tablespoons olive oil

    3 cloves garlic, minced

    1 teaspoon ground turmeric

    1 tablespoon curry powder

    1 teaspoon ground cinnamon

    3/4 tablespoon sea salt

    3/4 teaspoon cayenne pepper

    1 (15 ounce) can garbanzo beans, drained

    1/4 cup blanched almonds

    1  zucchini, sliced

    2 tablespoons raisins

    1 cup orange juice

    10 ounces spinach

    Directions:

    1. In a large Dutch oven place sweet potato, eggplant, peppers, carrots, onion, and three tablespoons oil. Saute over medium heat for 5 minutes.

    2. In a medium saucepan place 3 tablespoons olive oil, garlic, turmeric, curry powder, cinnamon, salt and pepper andsaute over medium heat for 3 minutes.

    3. Pour garlic and spice mixture into the Dutch oven with vegetables in it. Add the garbanzo beans, almonds, zucchini, raisins, and orange

    juice. Simmer 20 minutes, covered.

    4. Add spinach to pot and cook for 5 more minutes. Serve!

    This one is lighter and quick so I make it more in the summer.  I got it from allrecipes.com

    Chickpea Curry

    INGREDIENTS:

    2 tablespoons vegetable oil

    2 onions, minced

    2 cloves garlic, minced

    2 teaspoons fresh ginger root, finely chopped

    6 whole cloves

    2 (2 inch) sticks cinnamon, crushed

    1 teaspoon ground cumin

    1 teaspoon ground coriander

    salt

    1 teaspoon cayenne pepper

    1 teaspoon ground turmeric

    2 (15 ounce) cans garbanzo beans

    1 cup chopped fresh cilantro

    DIRECTIONS:

    1. Heat oil in a large frying pan over medium heat, and fry onions until tender.

    2. Stir in garlic, ginger, cloves, cinnamon, cumin, coriander, salt, cayenne, and turmeric. Cook for 1 minute over medium heat, stirring constantly. Mix in garbanzo beans and their liquid. Continue to cook and stir until all ingredients are well blended and heated through. Remove from heat. Stir in cilantro just before serving, reserving 1 tablespoon for garnish.
