  1. She is probably sniffing your network , what she means by seeing your computer in text format are actually raw packet dump by sniffer application, anyway to avoid this and deny other access to your computer, you can install ZOnealarm firewall its free thsi will prevent her from exploiting opened ports on your computer, install Tor www.torproject.org this will create an encrypted tunnel which will rpevent her from seeing your traffic or data going out and into your computer, all she will get are garbage data.

  2. Yes it is possible to for her to see what your computer sends out and receives if you are both on a local network. The way a computer sends information is in little packets and most of these packets are sent in plain text e.g email, http, IM, and many others can be read. The programs used to get this information are packet sniffers you install it on a computer and it listens to all the packets moving over the network to that computer.(note:To track packets on a single computer you need to use a man in the middle attack this is more complicated.) The only way to stop her from seeing these packets would be to use a layer of encryption which almost all web pages do when you enter your user name and password but after that point most of it is sent in plain text. In a home LAN there is no effective way to stop her from watching the packets on the network just keep in mind someone could be watching the info that you send to the web. This stands true for the information that leaves you home LAN you never know would could be watching. (note: It is possible to steal passwords and other thing with these tools.)

The part about her controlling her computer is also true there are allot of programs out there designed to do this. See can't control anyones computer she would have install the program on that computer to be able to get into it remotely. So if you have a firewall you should be fine as far as her being able to remotely control your computer.
