  1. sugar, salt, and oil is sure popular.

    some time ago, Trader Joes used to sell Cuban Mojito Sauce.

    now they've stopped.

    i and many others used it on fish, chicken, etc.

    it was really good, easy, and cheap.

    however, someone suggested to me that if i got some mild green salza and added lime juice, it might come close.

    i've not had time to do that, but i will try.

    for you and your daughter, it would be quite different from all the other suggestions, and healthy too.

    ps, i'd make rice and veges, cook the fish with lots of sauce, and pour the left over sauce on the rice.  it really was good.

    Ingredients

    3 tablespoons margarine or butter

    1 (10 oz.) package regular marshmallows

    - or -

    4 cups mini marshmallows

    6 cups Rice Krispies®

    Directions

    1. Melt margarine in large saucepan over low heat. Add marshmallows and stir until completely melted. Remove from heat.

    2. Add KELLOGG'S RICE KRISPIES cereal. Stir until well coated.

    3. Using buttered spatula or waxed paper, press mixture evenly into 13 x 9 x 2-inch pan coated with cooking spray. Cut into 2-inch squares when cool. Best if served the same day.

    MICROWAVE DIRECTIONS:

    In a large microwave safe bowl, heat margarine and marshmallows at HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Follow steps 2 and 3 above.

    Microwave cooking times may vary.

    Note

    For best results, use fresh marshmallows.

    1 jar (7 oz.) marshmallow creme can be substituted for marshmallows.

    Diet, reduced calorie or tub margarine is not recommended.

    Store no more than two days in airtight container.

  3. Pizza is good, you can make the dough together and everything. Or even Tacos its good to give them some stove experience.

  4. get some cookie cutters (simple shape like something round or huge hearts).. cut out shapes from pieces of sliced sandwich bread

    place them on a cookie sheet.. then spread with a spoon ful of ragu prepared pasta sauce (any brand or your homemade). then have junior sprinkle whatever he/she wants like a couple of chopped hotdogs, sausage, olives, cheese etc and bake mini pizzas for a few min till cheese melted.. mmmm!

  5. Individual pizzas - get some pizza dough from the bakery of your grocery store, or from your neighborhood pizza place and make your own at home.

    Candy "Sushi"

    1 Tbsp butter, cut into pieces

    12 marshmallows

    2 cups Rice Krispies

    6 fruit roll ups

    6 strips licorice, cut in half

    1.  Melt butter in medium saucepan over low heat and add marshmallows.  Stir until marshmallows are completely melted.  Remove mixture from heat and add cereat.  Stir to coat evenly.

    2.  Roll out the fruit roll-ups.  Place a few spoonfuls of the cereal mixture onto each fruit roll-up and gather toward the back edge.  Press 2 cut licorice twists onto cereal mix.  Wrap and roll the candy and fruit roll-up so that the finished product resembles a sushi roll.

    3.  Place a sharp knife into a bowl of very warm water.  Cut candy sushi with knice and arrange on a plate.  It will look like a big platter of sushi rolls.

    Mini Cheeseburger Pizzas

    1lb ground beef

    2 tsp worcestershire sauce

    2 tsp Montreal steak seasoning

    1 shallot, chopped, or 1 scallion, cut into thin slices

    4 oz cheddar cheese (8 slices from a brick)

    1 thin crust pizza shell (Boboli)

    Ketchup

    Mustard

    Mini gherkins

    1.  Preheat broiler and make sure oven rack is in center of oven.

    2.  Mix together ground beef, worcestershire, montreal seasoning and shallot.  

    3.  Break meat mixture into quarters and break each of them in half to make eight large meatballs.  Squish them flat to make mini hamburger patties.  Wash your hands.

    4.  Heat a large nonstick skillet over medium-high.  Grill patties in a little oil, 2 minutes per side.

    5.  Use a 3" round cookie cutter to cut out eight 3" circles of pizza crust.  Place the burgers on top.  Arrange cheese on burgers and put them in the oven to melt the cheese and warm the crust.

    6.  Top with ketchup, mustard and pickles.

  8. Gingerbread ABC Cookies

    INGREDIENTS:

    1/2 cup (1 stick) butter  

    3/4 cup brown sugar  

    2 eggs  

    1/2 cup molasses  

    1 tsp. vanilla extract  

    3 1/2 cups all-purpose flour  

    1 tbsp. cinnamon  

    1 tsp. ginger  

    1 tsp. baking soda  

    1/2 tsp. salt  

    1. In a large bowl, cream the butter and brown sugar. Beat in the eggs one at a time. Mix in the molasses and the vanilla extract.

    2. In another bowl, combine the remaining ingredients. Then add the flour mixture to the butter mixture a little at a time, stirring well each time. Cover the dough and chill for at least 2 hours.

    3. Heat the oven to 350 degrees. On a floured surface, roll the dough flat to a 1/4-inch thickness. Now your kids can cut out large letters with a butter knife.

    4. With a spatula, set the letters on a lightly greased baking sheet. Bake for about 10 minutes or until the cookies are set. Yield varies depending on the size of the letters.

    Peanut Butter & Jelly Surprise Muffins



    INGREDIENTS:

    1-3/4 cups all-purpose flour  

    1/3 cup sugar  

    2-1/2 tsp. baking powder  

    1/2 tsp. salt  

    1/2 cup creamy peanut butter  

    1 large egg  

    3/4 cup milk  

    1/3 cup butter, melted  

    1/2 cup strawberry, raspberry, or grape jelly  

    1. Preheat the oven to 375 degrees. Line a 12 muffin tin with muffin papers. In a large bowl, combine the flour, sugar, baking powder, and salt. In another bowl, mix the peanut butter with the egg. Add the milk, a little at a time, then mix in the butter. Pour the wet batter into the bowl with the dry ingredients and stir gently to combine. The batter will be stiff.

    2. Put a heaping tablespoon of batter in the bottom of each muffin cup. Use a finger to make an indentation in the center and put a teaspoon of jelly in the hole. Cover with another heaping tablespoon of batter or enough to fill each cup about 2/3 full. Spread the batter gently until no jelly is visible. Bake for 20 minutes, then turn the muffins onto a wire rack to cool for at least 10 minutes. Be careful: the jelly centers can get hot. Makes 12 muffins.

    EASY CHICKEN SUPPER  

    1/2 c. seasoned bread crumbs

    1/3 c. mayo

    1 tbsp. milk

    2 whole lg. chicken b*****s

    1. Preheat oven to 425 degrees. Skin and bone chicken b*****s; cut in half. On sheet of waxed paper, place bread crumbs. In pie plate beat mayo and milk until smooth. Dip chicken breast into mayo mixture, then coat with crumbs.

    2. Grease 13"x9" baking pan. Arrange chicken in pan, bake 5 minutes. Turn chicken over and bake 10 to 15 minutes until juices run clear and chicken is fork tender. Makes 4 servings.



    KID (AND MOM) FRIENDLY MACARONI

    CASSEROLE  

    1 box macaroni and cheese, prepared as directed

    1 can cream of mushroom soup

    1/4 cup sweet onion, chopped

    1/2 cup milk

    2 teaspoons butter

    1 lb hamburger (lean or it will be too greasy)

    salt and pepper, to taste

    Preheat oven to 350°F.

    Cook hamburger with onion and butter. DO NOT DRAIN (unless you used a more fatty beef)! Add cream of mushroom and milk.

    Cook over medium/medium-high heat until smooth. Remove beef from heat.

    Starting with the prepared macaroni and cheese, layer beef mixture and macaroni. Make 2 layers of each.

    Be sure that macaroni is covered well by the beef mixture and its' "juice" or it will dry out when cooking. Cook for about 25 minutes or until bubbly.
