Does anyone know how to can tomato?

  1. Your best bet would be to go to Walmart or someplace that sells canning supplies and buy a canning book.  

    The way I can tomatoes is to scald and peel them.  Pack them into jars, you will need to mash them down to make juice to cover the tomato and get out the air pockets.  Add 1/2 teaspoon salt for pints and 1 teaspoon for quarts. Boil water and pour over your jar flats.  Take a clean wet cloth and wipe the top of the jar.  Put on the jar flat and the band.  Hand tighten.  Put 2 quarts water in your pressure canner with a tablespoon vinegar.  Put jars in and let the pressure come to 5 lbs. and process for 10 minutes.  Remove canner from burner and let cool.  Remove jars and let set overnight. Check for seal, center will be down.  Next day remove bands and store your product.

    Here's some info on canning. Recent hybridization has reduced the acidity of tomatoes so they may not be acidic enough for traditional canning. For food safety, it's very important that you watch the pH carefully.
