Been tryin for 15 years still not successful.. someone must have a good recipe

  1. Fricasse Chicken Jamaican Style Recipe

      Caribbean Chicken

    Ingredients:

    1 3-4 lb Chicken cut up

    3 stalks scallion cut up and mash lightly

    2 small tomatoes cut up

    2 cloves garlic, crushed

    2 sprigs fresh thyme or 1/2 tsp dried

    salt and pepper to season

    1/2 tsp pimento

    2 Tbsp Corn oil

    1/2 cup chicken broth or water

    Directions:

    Rub the chicken with all the ingredients and let sit for 2 - 3 hours.

    Scrape seasonings off chicken and reserve.

    Pan fry chicken over medium heat until nicely brown, add

    seasonings and chicken. Cover pan and lower heat and cook for 35-40 minutes until chicken is cooked through.

    Traditionally, this is served with Rice and Peas (kidney Beans) made with coconut milk.

    Chileheads Jamaican Rice and Peas Recipe

      Caribbean Rice

    Serves 6

    Ingredients:

    1 16 oz can pigeon peas

    6 Habanero chiles, roasted & chopped*

    6 cloves garlic, finely chopped

    1/2 medium vidalia onion, chopped

    2 tablespoons olive oil

    2 cups rice

    1 15 oz can coconut milk

    water

    4 teaspoons Wyler's granulated chicken boulion

    *The original recipe called for 1 habanero, but this version was for a bunch of chile-heads.

    Directions:

    If using canned peas, drain and reserve the liquid.

    Heat the oil in a deep frying pan over high heat. Add the rice, and continue saute until the rice turns opaque and golden brown. Add the chile, garlic, and onion and saute for a few more minutes. Beware the fumes!!! Be careful not to let the rice brown or over brown. Stir the peas in with the rice. Do not stir again during cooking.

    Combine the coconut milk with the bean liquid. Add water to make 4 cups of liquid. dd to the rice and bring to a boil. Immediately reduce the heat to simmer.

    Cook uncovered until the liquid is slightly below the surface of the rice and holes form in the rice. Cover the pot and cook for 20 to 25 minutes or until the liquid is absorbed and the rice is tender. Allow to sit covered for another 1/2 hour. Great with jerk chicken.

  2. RICE AND PEAS IS THE CORRECT DISH

    Ingredients

    1 1/2 cups Dried red kidney beans soaked overnight

    2 cups long-grain white rice

    1/2 cup unsweetened coconut milk

    2 scallions, chopped

    2 Clove garlic, crushed

    1 teaspoon thyme

    salt, black, and hot pepper to taste

    Directions

    Boil the beans, garlic and salt until the beans are tender. Save three cups of the liquid.

    Place the beans and the three cups liquid to the pot along with the reaming ingredients.

    When it comes to a boil, add in the rice. Let it boil for 20 minutes and simmer when all the water has dissolved.

    Stir it with wooden spoon

    CURRY CHICKEN IS DELICIOUS

      

    Ingredients

    1 chicken (cut in small pieces)

    1 tablespoon Vegetable oil

    2 Cloves garlic, chopped

    2 Scallions, chopped

    1 tablespoon Curry powder

    1 tablespoon Allspice

    1 tsp ginger

    1/2 cup chicken broth

    1 large Potato diced



    Directions

    Heat the vegetable oil and add the garlic, scallions, pepper, curry, allspice, chicken broth, and ginger.

    Cook for a 5 minutes then add the chicken. Cook on medium heat for 30 minuets then add potatoes.

    Cook until potatoes are tender.
