Does anyone know how to make Ceviche that tastes like Escalante's version? ?

Their version has shrimp, white fish, avocado, mango, onion and cilantro, I think. I want to make it exactly like they do!!! I tried and it came out horrible. I don't just need to know the ingredients....I need to know HOW they make it. (Escalante's is a Houston restaurant)

  1. Most (if not all), the recipes/methods I've seen for ceviche call for covering the fish, shrimp in citrus & refrigerating for several hours or overnight. No restaurant I know of, gives out their recipes (tells HOW) they prepare their dishes. Here's an idea for the method etc.  Hope this helps:
