    zayra hit it on the nose,

    but try this also ,in a hot pan ,coat the bottom with a little oil ,and give the dipped and rolled enchillada a second fry, this will carmalize the sauce and crisp the tortilla more,then plate and top with more cheese and onion mix and add more (HOT ) OF THE MOLE ON TOP !  i usually serve with shredded chicken ( mole and chicken oh-boy) or fried with some chunky fried potatoe wedges rice and beans...and a salad if you have room.....l.o.l.


  2. yes just replace the sauce with mole.

    just fry the maize tortilla in oil. (dont make it hard and crispy)

    heat mole in a pan over the stove.

    dip the tortilla completly  in .

    then just add cheese in the middle and fold.

    add chopppped onions if wanted.

  3. Real mole. Recipe 10 dry poblano chiles, 1 tsp cumin, 2 garlic teeth, 1 tsp salt,1 sm red tomato or 2 tomatillos, 1 tbls onion, 5 pieces cloves,

    place chilis in 1 c warm water and soak for about 10 minutes. til softened. Place with water into a blender, blend until well liquified. About 4 minutes on high. pour into a hot skillet with 1/4 cup canola oil or even better with lard. be careful! it jumps a bit. stir and bring to a boil. In the meantime place rest of ingredients into blender bowl, ( you dont need to wash the bowl to do this. mix it with what ever chili is still in the bowl. blend all well, with 1/4 c water. pour into chili sauce. bring to a boil, turn down heat and simmer about 15 minutes. Then use it to dip your very lightly fried tortillas into it and roll with your favorite stuffing. Mine is boiled shedded chicken, chopped black olives and a bit of diced onion. place in pan add extra sauce on top. Add jack and cheddar cheese cover with foil put in hot over 350 for about 30 minutes, serve with beans rice and sliced fresh tomatoes and shedded lettuce. YUM YUM
