Question:

Does anyone know of a good Hummus recipe?

I like something with a garlic kick to it, just not to much.

  2. HUMMUS  

    1 12-oz can garbanzo beans

    1 clove garlic

    2 tbsp extra virgin olive oil

    2-3 tbsp tahini sauce (sesame paste)

    juice of 1 small lemon

    ½ tsp salt

    Drain 1/3 of the water from the can of garbanzo beans into a small bowl. Set aside for later use.

    In a blender, mix together the garbanzo beans with the remaining can water and the rest of the ingredients.

    Blend for 1-2 minutes until a smooth, slightly fluid paste is formed.

    If desired, add small amount of the saved can water and blend to create a more fluid consistency.




  3. If you like garlic flavor without the obnoxious burn brown it in butter first and reserve the butter for other things, like to spread lightly on your pita before you toss it in the pan to heat it and dip it in your fresh humus.

    The recipe is simple, ground or fine chopped chick peas (garbanzo beans), garlic and plain yogurt. Some like finely diced cucumbers.

    Salt and/or pepper to taste, zing with a little lemon zest if you prefer, fresh basil or mint (easy on that) adds a nice twist, zip it up with a dash (just a dash) of you favorite curry and/or cayenne.
