  1. Picnic Potato & Egg Salad

    This salad is delicious with just about anything grilled, and always tastes best outdoors!

    Ingredients:

    3 pounds potatoes, cooked until just tender, cubed, cooled

    5 or 6 hard cooked eggs, cooled, coarsely chopped

    1/4 to 1/2 cup chopped red onion

    1/4 to 1/2 cup chopped celery, optional

    thinly sliced tomatoes and cucumber, for garnish, optional

    .

    Dressing:

    3/4 cup mayonnaise (a little more or less, as desired)

    1 to 2 tablespoons prepared mustard

    salt and pepper to taste

    Preparation:

    Combine potatoes, egg, onions, and celery. Stir in mayonnaise, mustard, and salt and pepper to taste. (Stir the mayonnaise and mustard in a little at a time, until you have the flavor and consistency you like.)

    Top with thinly sliced tomatoes and cucumber, if desired.

    Serves 6 to 8.

  3. Fruity Couscous Salad

    1 1/3 cups dry couscous

    2/3 cup slivered almonds

    1/2 cup packed dried apricots, chopped

    2/3 cup Craisins (sweetened, dried cranberries) or raisins, microwaved in

    1 cup water for 1 minute

    1 teaspoon cumin

    3 scallions, thinly sliced with greens

    1 pinch Salt and freshly ground black pepper, to taste

    DIRECTIONS

    Prepare couscous according to package directions. Combine all ingredients; toss. Serve at room temperature or chilled



    Orzo Salad

    Recipe courtesy Giada De Laurentiis

    4 cups chicken broth

    1 1/2 cups orzo

    1 (15-ounce) can garbanzo beans, drained and rinsed

    1 1/2 cups red and yellow teardrop tomatoes or grape tomatoes, halved

    3/4 cup finely chopped red onion

    1/2 cup chopped fresh basil leaves

    1/4 cup chopped fresh mint leaves

    About 3/4 cup Red Wine Vinaigrette, recipe follows

    Salt and freshly ground black pepper

    Pour the broth into a heavy large saucepan. Cover the pan and bring the broth to a boil over high heat. Stir in the orzo. Cover partially and cook until the orzo is tender but still firm to the bite, stirring frequently, about 7 minutes. Drain the orzo through a strainer. Transfer the orzo to a large wide bowl and toss until the orzo cools slightly. Set aside to cool completely.

    Toss the orzo with the beans, tomatoes, onion, basil, mint, and enough vinaigrette to coat. Season the salad, to taste, with salt and pepper, and serve at room temperature.

    1/2 cup red wine vinegar

    1/4 cup fresh lemon juice

    2 teaspoons honey

    2 teaspoons salt

    3/4 teaspoon freshly ground black pepper

    1 cup extra-virgin olive oil

    Mix the vinegar, lemon juice, honey, salt, and pepper in a blender. With the machine running, gradually blend in the oil. Season the vinaigrette, to taste, with more salt and pepper, if desired.

    Yield: 1 3/4 cups

  4. I had success with this rice salad a couple weeks ago. One really good thing about this at a picnic is that there isn't really anything in it to go bad and it also tastes good cold or at room temp.

    rice salad with arugula, pine nuts and olives

    Servings: Serves 8.

    3 cups canned chicken broth

    2 cups long-grain rice

    5 tablespoons olive oil

    3/4 cup slivered, pitted Mediterranean olives such as Kalamata (about 4 ounces)

    2 tablespoons fresh lemon juice

    1 1/2-ounce package fresh arugula, stemmed, chopped

    3 green onions, minced

    1/2 cup pine nuts, toasted

    1/3 cup freshly grated Romano cheese

    Bring 3 cups chicken broth to boil in heavy medium saucepan. Add rice. Bring to boil, reduce heat to low, cover and cook until chicken broth is absorbed, about 20 minutes. Turn off heat and let stand 5 minutes.

    Fluff rice with fork. Transfer to large bowl. Mix in 5 tablespoons olive oil, then all remaining ingredients. Season salad to taste with pepper. (Salad can be prepared 4 hours ahead. Let stand at room temperature.)
