Does anyone know of a good dessert you can make on a charcoal grill?

The coals after you grill your dinner are at such a nice low temp-it would be nice to throw on some kind of dessert that would be ready after your main coarse. I am not looking for s'mores...........

  1. Sweet Fruit Kabob

    3 bananas, thick slices

    2 Bartlett pears, sliced into thick wedges

    2 granny smith apples, sliced into thick wedges

    2 peaches, sliced into thick wedges

    1 fresh pineapple cubed

    Marinade:

    1 cup grapefruit juice

    1/2 cup honey

    3/4 teaspoon chopped fresh mint

    Combine juice, honey, and mint. Marinate fruit for at least 30 minutes. Place fruit on skewer, alternating types. Grill or broil for 6-8 minutes. Baste with marinade as needed.

    Notes: The family has fun assembling. Little ones will need help cutting. Other juices can be substituted for marinade and the mint left out.

  2. We fix this quite often--grilled fruit.  You can skewer it or not.

    Mix up 1/2 cup brown sugar, 1/4 cup rum, 2 t vanilla, 1/2 t each of cinnamon and ginger and 1/4 t chipotle chile pepper.  Stir to dissolve the sugar.  Brush on fruit pieces, pineapple, banana, star fruit, peaches, nectarines and the like and grill.  The grilled fruit is great on ice cream.


  3. Make some fruit kabobs and serve them over ice cream.  It's so good and easy to do.

    I recommend peaches, nectarines, apples, pineapple, melon, plums and similar fruits.  Simply cut them in half, remove the pit or seeds and in the case of the pineapple the tough center core.  Cut them in chunks at least 1 inch, keeping size uniform so they are done at the same time.  Allow one filled skewer per person.

    Use wooden skewers that have been soaked in water for at least 30 minutes (to prevent burning).  Add your prepared fruits and drizzle with honey.  You can baste with melted butter during the last minute or two of cooking.  Place over hot coals and allow to brown before turning.  The time will depend on the heat of the coals.  Turn to brown on all sides, remove from heat and allow to cool for a couple of minutes.

    Push fruit off skewers onto prepared bowls of vanilla ice cream and enjoy!

    Prep Time: 10 minutes

    Cook Time: 18 minutes

    Ingredients:

    4 large peaches

    1 cup frozen blueberries

    1/3 cup brown sugar

    3 tablespoons lemon juice

    Preparation:

    Wash and halve peaches. Remove pit. Place peaches on aluminum foil so that you can fold up the foil and seal the peaches in. Spoon 2 tablespoons of berries into each peach half. Sprinkle 2 teaspoons of brown sugar on each and 1 teaspoon of lemon juice. Fold up foil and seal. Place on hot grill and cook for 15-18 minutes Turn once. Serve right out of the foil.

    GRILLED PEACHES WITH BERRY SAUCE

    INGREDIENTS................

    1/2 (10 ounce) package frozen raspberries in syrup, slightly thawed

    1 1/2 teaspoons lemon juice

    2 fresh peaches, peeled and halved

    5 teaspoons brown sugar

    1/4 teaspoon ground cinnamon

    1/2 teaspoon vanilla extract

    1 teaspoon butter or margarine

    DIRECTIONS

    In a blender or food processor, process raspberries and lemon juice until pureed. Strain and discard seeds. Cover and chill. Place the peach halves, cut side up, on a large piece of heavy-duty foil (about 18 in. x 12 in). Combine brown sugar and cinnamon; sprinkle into peach centers. Sprinkle with vanilla; dot with butter. Fold foil over peaches and seal. Grill over medium-hot coals for 15 minutes or until heated through. To serve, spoon the raspberry sauce over peaches.

    GRILLED PINEAPPLE CAKE

    INGREDIENTS....

    1 can (20 ounces) sliced pineapple

    1 teaspoon butter

    1/2 teaspoon brown sugar

    1/4 teaspoon vanilla extract

    1/8 teaspoon ground cinnamon

    1/8 teaspoon ground nutmeg

    6 sliced pound cake

    Vanilla ice cream

    Caramel ice cream topping

    DIRECTIONS....

    Drain pineapple, reserving 1/3 cup juice and six pineapple rings (save remaining juice and pineapple for another use).

    In a microwave-safe dish, combine, butter, brown sugar, vanilla, cinnamon, nutmeg, and reserved pineapple juice.

    Microwave, uncovered, on high for 1 to 2 minutes or until bubbly. Brush half of the mixture on both sides of pineapple rings and cake slices.

    On an uncovered grill over medium heat, cook pineapple and cake for 1 to 2 minutes on each side or until golden brown, brushing occasionally with remaining pineapple juice mixture.

    Top each slice of cake with a pineapple ring and a scoop of ice cream; drizzle with caramel topping. Serve immediately.

  7. If you have a heavy iron skillet with a lid you can make any cobbler or fruit crumble recipe by placing it into the center of the hot coals and "baking" it that way.

  8. All the above fruit ideas are great.  I would do that along with grilled sliced pound cake and whipped creap or ice cream on top.
