I hate to rain on your parade, but the fine quality of French pastry lies both with delicious ingredients (butter, sugar, cream) and FRESHNESS.  At some Target stores, you can buy frozen eclairs from Belgium (ok it's not France, but still good) and they're ok.  You will probably have better luck looking in the yellow pages for a French bakery (in the US).  Most bigger cities have a few.  It's a labor intensive business and takes a special skill so there are relatively small numbers of these bakeries.

    I searched the websites of several famous pastry shops and none of them will ship outside the immediate vicinity of Paris.  The delicacy of their goods probably makes them unshippable.
