  3. just mix some fruit and veggies toghether and eat as a salad snack, or maybe make a strawberry or watermelon shake! any kinds of fruit will work, but keep it simple. this means no mango-bannana-watermelon-honeydew-smooth... with strawberries! lol!

  4. Preheat oven to 400 degrees

    Thinly slice eggplant

    dip eggplant in fat free italian dressing

    then dip into bread crumbs (seasoned)

    place on baking sheet and bake for 10-15 minutes until crispy/brown (eat as is or top with marinara sauce-canned sauces are good buys and much easier than making your own sauce) you could also serve with some whole wheat pasta.

    spaghetti sauce with thinly sliced zucchini is good (use a peeler for length wise or cut into half moons by cutting zucchini lengthy wise then into half moons) let simmer with sauce while pasta cooks

    roasted vegetables and rice

    stir fry and rice (i like equal parts vegetable broth and soy sauce to saute veggies in and even thin slices of tofu)

    fried rice (put however much frozen vegetables you want in skillet with vegetable oil, saute for a minute add cooked brown rice (as much as you want) saute more, if you eat eggs, move rice and veggies to outside of pan creating circle and crack egg in middle and cook like a fried egg then use spatula to cut it up and mix in with veggie/rice.  Add soy sauce, mix and you're done.

  6. Okey, sorry I only have vegan recipes but I assure you they taste delicious.. Anyways, here they are:

    ---------------> this is one of my favorite. It is very easy and delicious. This is great!

    Vegan Sloppy Joes

    • 1/4 tablespoon oil

    • 1/4 cup coarsely chopped onion

    • 1/2 medium green bell pepper, coarsely chopped

    • 3/8 cup water

    • 4 ounces can tomato sauce

    • 1/4 tbsp chili powder (more to taste)

    • ¼ tbsp other available spices (depends on your taste)

    • ¼ tbsp black pepper

    • 1/2 tablespoon organic sugar

    • ¼ tsp crushed garlic

    • 3/8 cup dry textured vegetable protein (TVP) beef type

    Heat the oil and sauté the onions, pepper and garlic for 5 minutes. Add the remaining ingredients and simmer for 20 minutes. Serve over vegan rolls and breads.

    Pipin’ Hot Bakery Whole Wheat Tortillas

    ½ cup whole wheat flour

    ¼ tsp salt

    ¼ tsp baking powder

    1 tbsp canola oil

    ¼ cup water

    Combine flour, baking powder and salt.

    Stir in the oil and water all at once, using mixer or a fork, and toss quickly.

    When dough can be gathered into a soft mass, turn onto floured surface and knead a few times.

    Form 2 balls of dough, dredge in flour.

    Flatten first ball of dough into a disk.

    Roll out dough on floured surface until 7 inches or larger with even strokes that do not reach to the edge, turning over frequently.

    Place tortilla in ungreased, frying pan that has been preheated to medium-high heat.

    Cook 30-40 seconds on one side, turn over with spatula and cook 30-40 seconds on other side., First side should be pale and sprinkled with brown spots and the other side will be blotched.

    Serves 2

    Vegan Crème Au Café (Vegan Coffee Blanc-Mange)

    ½ cup soymilk

    ¼ cup strong coffee cold

    1 2/3 tbsp cornstarch

    1 2/3 tbsp coldwater

    1 2/3 tbsp organic sugar

    1/3 tsp vanilla extract

    1/3 pinch salt

    1. In a pot over medium-low heat, put the soymilk, the coffee, the sugar and the pinch of salt.

    2. In a small bowl, whisk the cornstarch with the cold water. Add to the pot.

    3. Cook, stirring constantly for 15 to 20 minutes.

    4. Add the vanilla.

    5. Lightly oil a mold in a fancy shape.

    6. Put the mixture in the mold. Let cool then refrigerate for at least 2 hours.

    ---------------> This is for all the tofu haters and tofu lovers and meat eaters and veg*ns alike. This is very very delicious.

    Vegan Breaded, Fried, Softly Spiced Tofu

    1 (16 ounce) package extra-firm tofu, drained and pressed

    1 1/2 cups vegetable broth or stir fry mix

    3 tablespoons vegetable oil

    1/2 cup all-purpose flour

    1 tbsp vegan marinade powder mix

    1 teaspoon salt

    1/2 teaspoon freshly ground black pepper

    Cut pressed tofu into 1/2-inch thick slices; then cut again into 1/2-inch wide sticks.

    Place tofu in a pan, and pour broth or stir fry mix that was dissolved in 1 ½ cup water over the top. Simmer for 10 minutes.

    In a separate bowl, stir together flour, salt, pepper and marinade powder mix.

    Warm oil in a large skillet over medium-high heat.

    Let tofu get warm until you can tolerate the heat when you touch it, and squeeze most (but not all) of the liquid from them or just tissue the liquid from it.

    Roll sticks in breading. (You may have to roll sticks twice to end up with a fairly dry outer layer of breading.)

    Place tofu in hot oil; fry until crisp and browned on all sides. Add more oil if necessary.
