  2. Prickly Pear Margarita

    1 ounce premium tequila

    1/2 ounce Grand Marnier

    2 1/2 ounces pureed prickly pear cactus fruit, chilled*

    2 1/2 ounces sweet and sour

    1/4 wedge of lime

    Coarse salt

    1 cup ice cubes

    Prepare margarita glass by rimming with lime juice and salt. Put ice into a shaker. Add tequila, Grand Marnier, fruit and sweet and sour. Shake vigorously and pour into prepared margarita glass. Garnish with a wedge of lime.

    Blended Margarita:

    Put all ingredients into a blender and blend until smooth.

    * Use very ripe uncooked fruit, cleaned and peeled (very carefully, of course).

    Pomegranate Margarita

    Serves 2

    2 cups Pomegranate Juice to fill 1 ice tray

    1/2 cup Lime Juice

    2 Tablespoons Orange Flavored Liqueur

    1/2 cup Tequila

    Pour pomegranate juice into ice cube tray. Freeze until solid, about 2 hours. Pop cubes from tray. In a blender, combine lime juice, liqueur and tequila. Turn blender to highest speed and gradually drop in all but 2 juice cubes, whirling until slushy. Wet the top of serving glass and rim with salt. Place a pomegranate cube in the bottom of each glass.

    Pour margarita mixture in and enjoy.

    Watermelon Mango Margarita

    Makes 2 to 3 servings.

    2 cups chopped seedless watermelon

    Flesh of 1 ripe mango

    Juice of 2 fresh limes

    1 tablespoon sugar

    1 tablespoon triple sec

    2 jiggers tequila (A jigger is about 1 1/2 ounces or just under 1/4 cup)

    2 cups ice

    Place all ingredients in a blender and puree until smooth.

    Margarita recipe

    1 1/2 ounces tequila

    1/2 ounce triple sec

    2 tablespoons lime juice

    2 ice cubes

    Rub the rim of the glass with lime juice, then dip the rim into coarse or kosher salt. Fill the glass with the ingredients listed above.
