  1. From: T. Clark Miller/Rainforest Café

    Linguine noodles cooked n drained

    2 ozs. chicken tenders- cubed

    20 medium shrimp- tails removed

    2 ozs, cooked andouille sausage- sliced

    2 ozs. green bell peppers diced

    2 ozs. red onions- sliced

    2 ozs. Roma tomatoes- diced

    1/4 c. chopped green onions

    Cajun seasoning

    Seafood stock

    ~Creole Butter Sauce ~

    4 T. garlic, minced

    2 T. Worcestershire sauce

    1 T. cayenne pepper

    1 tsp. red pepper flakes

    1/2 tsp. black pepper

    1/2 tsp. thyme

    1/2 tsp. oregano

    1/2 tsp. kosher salt

    1 lb. butter

    In food processor or blender- mix all ingredients “except” the butter.

    Add softened butter ñ mix until ingredients are incorporated into the butter. When butter chunks no longer appear- about 2 minutes- wrap in plastic - refrigerate

    Melt Creole Butter in a sauté pan - cook until browned. Add chicken - cook until 1/4 done.

    Add - shrimp. Cook until 1/2 done. Add - vegetables ñ sausage.

    Ladle in seafood stock around the outside of pan avoiding washing spices off the chicken ñ shrimp. Cook until heated through. Place in bowl toss with linguine ñ sprinkle with tomatoes and green onions. Dust with Cajun seasoning to taste.
