  1. Homemade T.Sauce

    1/3 cup (85 ml) brown sugar

    2 tsp (10 ml) garlic powder

    1 tsp (5 ml) ground ginger

    2 cups (500 ml) tomato ketchup

    1/2 cup (125 ml) soy sauce

    1/3 cup (85 ml) cider vinegar

    1½ tbsp (20 ml) Worcestershire sauce

    Combine dry ingredients in a bowl, or blender. Add liquids and mix very well.

    Transfer to a tightly sealed jar and refrigerate for at least four hours - overnight is best.

    Stir well before using.

    TERIYAKI GLAZE    

    1/4 c. unsweetened pineapple juice

    1/4 c. soy sauce

    1/4 c. dry sherry

    2 tbsp. brown sugar

    1 tbsp. cornstarch

    2 tsp. grated fresh ginger root or 1/2 tsp. ground ginger

    1 clove garlic, minced

    In a small saucepan combine pineapple juice, soy sauce, sherry, sugar, cornstarch, ginger root, and garlic. Cook and stir until thickened and bubbly. Cook and stir 2 minutes more. Makes about 3/4 cup.

    To thicken it you can bring to a simmer and add a slurry- equal parts cornstarch and water.
