Does anyone know what I can substitute in a recipe for sugar snap peas?

This is a cold salad with sugar snap peas, pistachios and a lemon-mint vinagrette (this month's vegetarian times). It is the end of the season for the sugar snap peas and the ones I got are horrible - inedible when cooked.

Any thoughts on what would be an appropriate substitute?

  1. Thin green beans, just blanched.


  2. yeah, asparagus could be good, or mabye a mix of abunch of different kind of beans/chickpeas mabye?

  3. Asparagus would work;-} but it's season is over too.

    Broccoli or cauliflower is good in small pieces.

    Or just plain green beans would probably do it.

  5. Are pre packed or frozen not availble? Or also not acceptable even if they are? Try waxed beans or green beans but they definitely won't be the same..

  6. Pea pods in general if you can't have sugar snap peas, and then normal long green beans if unavailable, then just try sliced carrots, bamboo shoots and yellow peppers (colorful - slice them to be uniform to the bamboo shoot slices).

    I'd try green beans, yellow beans, or perhaps lima beans.

  8. Use Edamame.
