    Make your own:

    Veggie Tuna (Raw)

              o 5 lb / 2.3 kg of carrots, peeled

              o 2 stalks celery

              o 1 bell pepper, chopped (optional)

              o 1 small red onion, diced

              o 1 large tomato

              o 1/2 cup eggless mayonnaise

              o 2 T tamari (or soy sauce)

              o 1 T sea salt or other salt substitute

              o 2 t kelp seasoning

    Juice the carrots in an electric juicer. Save the pulp to make this dish and enjoy the juice as a refreshing beverage.

    Finely chop the celery, bell pepper, onion, and tomato. Add the pulp of the carrots to the chopped vegetables. Knead the eggless mayonnaise into the carrot pulp mixture. Next knead in the tamari. Finally, knead in the sea salt and kelp seasoning.

    Better Than Tuna

    2 cups carrots

    1 medium ripe bell pepper

    1 tomato (optional)

    1 Tbsp. Bragg's Liquid Aminos

    4 Tbsp. no-oil dressing

    2 stalks of celery

    1/2 medium red onion

    1/2 cup parsley

    1/2 tsp. kelp

    Finely chop the pepper, celery, onion, and tomato. Place in a bowl. Finely grate carrots, resembling carrot pulp, and add the carrot to the vegetable mixture.

    Combine 4 Tbsp. of no-oil dressing, Bragg's, parsley and kelp and add to the above chopped vegetables. Mix well and allow to marinate for flavors to blend. May be served on a bed of lettuce, on a sandwich, or to stuff a pita or tomato.

    Mock Tuna Salad

    Ingredients (use vegan versions):

        1 - 15oz. can chickpeas, drained and rinsed

        2T. soy vegan mayonnaise or pureed silken tofu

        1T. sweet pickle relish

        2t. spicy brown mustard

        salt and pepper to taste

    Directions:

    In small bowl, mash chickpeas.  Add soy mayonnaise or silken tofu, pickle relish, mustard, salt and pepper and mix well.  This is wonderful in a whole-wheat pita with sprouts and some chopped tomato!  Makes 4 servings.

    Serves: 4, Preparation time: 5 minutes

    Mock Tuna Spread

    1 15oz can garbanzo beans, drained and rinsed

    1 stalk celery, finely chopped

    1/4 C finely chopped onion

    1/4 C finely chpped green onions

    1 Tbsp lemon juice

    1/4 C tofu mayonnaise

    Place beans in a food processor and process until coarsely chopped OR mash with a bean masher. Don't over process to a smooth consistency.

    Place in a bowl and add the remaining ingredients. Mix well. Chill at least one hour to blend the flavors.

    Recipe Hint: Add 2 tablespoons of pickle relish to thie spread to jazz it up. We like this spread oncrackers or toasted fat-free crumpets.

    Makes 2 cups. Prep time: 15 min. Chilling time: 1 hour.

    I highly recommend adding the relish. I also add a shake of paprika

    100% Raw Vegan Simple Tuna Salad

    Serves 4 (approximately ½ cup servings)

    Equipment needed: Food processor

    ¾ cup soaked sunflower seeds (soak ½ cup raw seeds for 8 hours)

    ½ cup soaked almonds (soak 1/3 cup raw almonds for 8 hours)

    2 stalks celery diced

    1 clove garlic minced

    1 tablespoon lemon juice

    ½ teaspoon dry dill weed

    ¼ teaspoon herbemare

    1-2 tablespoons olive oil

    Place all ingredients in the food processor with the S blade in place and process to desired consistency. Taste and adjust flavors to your liking.

    If you prefer a more traditional tuna salad recipe you can fold into the tuna mixture, by hand, 2 tablespoons of homemade vegan mayonnaise. This really makes it delicious. Serve on a bed of romaine lettuce and top with sliced grape tomatoes. This makes an especially wonderful and healthy dish for a ladies luncheon. If you like, you can put the simple tuna salad recipe in whole wheat wraps and top with sprouts…you’ll think you are eating the real deal and the best part is, you won't have any fishy aftertaste.

    "Tuna" Mushroom Casserole

    Ingredients (use vegan versions):

        1 medium onion, chopped

        2 stalks celery, chopped

        10 oz. baby portabella mushrooms, sliced

        4 tablespoon vegan margarine

        1 teaspoon soy sauce

        1/4 cup flour

        2 cups veggie broth

        1-1/2 cups unsweetened soy milk

        2 teaspoon lemon juice

        1 cup canned chickpeas, drained and mashed

        1/2 cup crushed potato chips plain

        1/2 cup French fried onions

        8 oz. fusilli pasta

    Directions:

    Preheat oven to 350 Degrees F and prepare an 8x8" glass baking dish with a quick spray of cooking oil.

    Heat 1 tablespoon vegan margarine in a pan.  Add onion, celery and mushrooms and saute for a few minutes. When mushrooms give off liquid, add soy sauce.  Keep cooking until all vegetables are tender, turn off heat.

    In a medium soup pot, melt the remaining 3 tablespoon vegan margarine over low heat. Stir in the flour and whisk  for a few minutes. It will get thick. Start adding the broth bit by bit, whisking all the while and bring to a boil. Add the soymilk little by little and continue to stir and simmer. Add the mushroom/celery/onion mixture and lemon juice. Season with salt, pepper and some paprika. Add the mashed chickpeas a spoonful at a time to break it up evenly throughout the sauce.

    Cook pasta until al dente, approx. 9 minutes. Drain and return it to the pot.  Add the mushroom sauce to the pasta and stir gently to combine. Transfer the mixture to the baking dish. Cover tightly with foil and bake for 15 minutes.  Uncover the dish and sprinkle crushed chips and french fried onions on top and bake for another 5-6 minutes or so or until the top is browned and crispy.

    Serves: 8

    Preparation time: 20-30 minute

  3. There is a product called Tuno. I really don't recommend it(if they still even make it.)

    A common replacement is made with canned chickpeas.

  7. Tofuna maybe??? Is it even possible to get a fish that isn't.. well? A fish? My only possible suggestion would be Whole Foods. it's a great store for vegetarians and vegans, but if fish is off the menu for these people, I would think that a tofu flavor would be your only hope.
