I have bread flour which I purchased. When I follow the recipe and put in the yeast, it totally rises out of proportion. Why does this happen?

  1. Your bread flour might already have a rising agent in it?  Check the ingredients and see.  Then do a test batch with regular flour, I bet you'll be fine then with that one, my bread machine turns out great every time and I just use regular white or wheat flour.

  2. What size bread machine do you have?  Does is make 1 lb., 1 1/2 lb., or 2 lb. loaves?  Then see how much bread your recipe makes.

My guess is your recipe is making too large a loaf for your machine.  Try cutting your recipe in half.  That may solve your problem.

  3. To much yeast or the wrong kind

  4. Bread recipes usually call for a certain amount of salt, which helps control the rising. Is there any salt in the recipe you're using? You might try adding a half-teaspoon.

  5. the pan or wahtever your using could be small.n when your using yeast  you need to make sure there is PLENTY  of room for it to rise
