Question:

Does anyone out there have information about a grain known as Quinoa?

I understand that it can be used as a substitute for rice and has lots of proteins and low carbs. Thanks.

  1. It's available at all health food stores (e.g. Whole Foods) and many supermarkets. People have been enjoying it for centuries.

Quinoa has lots of nutrients and is high in protein and fiber.  It is not low in carbs.  The high fiber and protein make it more suitable for people watching their refined carb intake by balancing carbs with fiber and protein,  The energy from the carbs will be more "slow release" than many other grains.

  4. It is pronounced KEENWA and it is very healthy.

  5. Quinoa is delicious!  I would categorize more like a cous cous substitution, mostly just due to the shape and texture.  Really, it's a fairly neutral product and can definately be used in place of a bed of rice.

    It's a "perfect food".  It has all the essential amino acids, making it a complete protein source.  It's high in protein, gluten free and yummy.  It has a slightly sweet earthy/nuttiness to it, and in a very appealing way.

    It's very easy to cook.  Essentially just boil it in seasoned water until the quionoa has absorbed all the water and fluff with a fork.  It reheats really well, too, which is something that rice and cous cous don't do as well.

    Clearly, using a flavored broth is better for flavor, herbs, etc.  Throw some dried fruit in at the end and some fresh herbs for a change of pace.  Use it for tabbouleh!

    It's good. I encourage you to find some, cook it and eat it.
