Question:

Does cesar dressing have anchovies?

A co-worker said that it did and I never heard of that before. That doesn't make me right just because I haven't heard of it but I'm allergic to fish and never had an allergic reaction.

  1. Traditional Caesar dressing does indeed have anchovies in it.  Or at least anchovy paste.  I can't begin to tell you how many gallons of Caesar I used to make.  And every 5 gallon bucket of it required 5 large cans of whole anchovies.


  2. Yes it does.  Some make it without although it's not correct.  Often anchovy paste is used.  It's just a flavor.  You must not be allergic to all fish.

  3. Yes anchovies are in Ceaser dressing....but to me I cant taste it, dont really like fish but I love Ceaser dressing!!!!

  6. The dressing was invented in a restaurant in Mexico.  Whether it had anchovies or not is debatable. Some authorities say it did, others not.  But the anchovies were introduced some time in the history and they are often part of the recipe now.  What is not debatable is how it is made.  You start with a wooden bowl, rub it well with salt and a cut clove of garlic.  In the bowl you put some dry mustard, lemon juice and a bit of pepper.  you stir to mix and dissolve any remaining salt.   Stir in a some good virgin olive oil, whisk or stir well  (bear in mind that for a large salad (ie, a couple of bunches of romaine, we have only used three table spoons of olive oil perhaps).    Toss in the lettuce, add a Tbsp of quality parmesan, (two or three anchovy filets), and one raw egg (or an egg poached for a minute in the shell).  Toss.. Add some croutons.. Once you  have had a salad made this way, there is no going back,.

    The really cool thing is that a well made Caesar salad is also low fat.. the above recipe,  3 Tbsp  olive oil, 1 Tbsp Parmesan, 1 egg, and 3 choives, feeds 6!  

    There is an Italian restaurant in Hartford CT,  Carbone's that does Caesar for two table side...  Theirs is exquisite.. the above is an approximation.

  7. Nope. Here's what's in it:

    1 cup mayonnaise

    1 tbsp lemon juice

    1 tsp Worcestershire

    1 clove of garlic (minced)

    1/4 tsp salt

    1/8 tsp pepper

    1/2 c Parmesean cheese

    1 tbsp of milk or half and half

  9. It can me made with or without. The authentic recipe has anchovies.

  10. The original recipe does, however, if you are ordering in a restaurant simply ask (it's usually in the dressing) and if it's in the dressing ask for a simple olive oil & lemon dressing.  If you are making the dressing yourself don't put it in.
