The two best-known versions in the US -- Chinese-style egg drop and Italian-style stracciatella -- are usually chicken-broth based. There's no particular reason you have to stick with that if you're making your own version, though I'd be careful about calling it Chinese or Italian food if you go out on a limb with it.

It can, there are several variations of it, even among Asian "groups", I have had it plain, with corn, and other vegetables, but I haven't had it with chicken, sounds good though.
