I have never heard of eyes changing colour with weather. I also want to know.

Eye colour does not change with the weather. Sometimes your eyes may look different to others or on photographs, but this is usually because it is raining or you are near water. Light refracting from the water is reflected on to your colourful eye surface, making it appear brighter or picking out other pigments in it.
