  1. when canning wheat for emergency stores, the cans are filled with carbon dioxide to prevent pests from growing.

    this may not be a good way for fruit.

    dried fruit is usually stored in a sealed room and a sulphur candle is burned, which releases sulphur dioxide. (you will see this on the label)

    fruit flys are a very serious pest, and are the reason the customs guy makes you throw away oranges and other fresh fruit when you enter the USA

  3. Most eggs, regardless take oxygen in threw their membranes. If you deprive an egg of oxygen it will die. If you have food in a container sealed, it needs to be either refrigerated and used within a certain time, or it needs to be properly canned, which is heated above the boiling point for a certain time in a pressure cooker. No other way is safe. If you put food in a container and put it under a vacuum it will kill the eggs, but the food would not be the same as when it went in before the vacuum, and unless refrigerated and used promptly, would have mold and bacteria. If you want to store fruit and worry about fruit fly eggs, look at the fruit industry and see what they use for gases to store fruits long term. In apples the temp gets dropped to close to freezing (not freezing though!) the oxygen (air) is removed/ replaced with mostly nitrogen and 3% or so CO2, just a trace of oxygen left. Now the apple has no oxygen to breath so it doen't use up sugars and stays crisp and eatable. The humidity is kept high/ maximum so they don't get dry. The apples can be stored for a long time, many monthes without damage. Many fruits are treated this way and one can look up the long term storage "gases" that work best. It is all on line. And, yes, that would kill the eggs and not ruin the fruit. I have seen huge storage rooms for produce with gas controlled at the University where I studied agriculture. Not too hard to do if you have a lot of stuff to store. Just need an air tight cool storage and gases, but be aware that this environment will kill a person quickly, high CO2 and no oxygen! No little kids allowed near the area! If you do it, you need to understand it clearly! But it isn't complicated, and works great. You can store your apples in the fall and be eating then still in the spring when the leaves first come out. Pssstt, that what you get at the grocery store!
