Does it make much of a difference of having a very flexy board and medium flex bindings?

These things are based on preference. Do you like a Flexy board?  Usually, Flexy boards are better for terrain parks combined with loose and flexible bindings so you can move around and land those tricks easier.

But these are still based on preference. If you like it, and it works for you, then go for it.

The bindings have NO PLAY in the flex or anything, the only play they have is their weight, which most bindings are carbon fiber and are very light. They only hold your feet to the board.
