Does it matter if you put cream of tarter in a chiffon cake?

I don't have cream of tarter right now and I have to make this now!

Also, can I substitute cake flour with All purpose flour?

  1. Go buy cream of tarter or risk messing up your cake.  I know baking powder is a combination of cream of tarter and cornstarch, but a chiffon cake is very delicate, so I would be afraid to suggest this substitution, but if you want to be brave.... Also, you can substitute all purpose flour, but cake flour usually makes a more tender product.


  2. for the cake flour you can use  

      1 3/4 cups all-purpose flour

       1/4 cup cornstarch

    This is equal to 2 cups of cake flour

    Substitute the cream of tartar for an equal amount of lemon juice or vinegar. The amount for substitution should measure about 1/8 teaspoon per egg white.
