No it depends on which jailbreaking method you use.

Ziphone.org - is a quick jailbreaking method that doesnt delete anything. (for firmwares 1.1.x, not 2.0+)

winpwn.com has the option of restoring or a quick jailbreak that wont delete anything (for firmwares 2.0+)

and quickpwn is pretty much the same. (2.0+)
