Paris is not a single entity like a department store.  That is like asking "does LA take Amex cards?"  well... where in LA?  What part?  Which store?

Paris is HUGE city with thousand of businesses that often take credit cards.  Credit cards are widley used throughout France.  It would be up to the individual retailer to decide if they want to accept Amex.  Many do.  But Amex charges higher processing fees than most other cards - so you would be wise to check with the retailer first.  Maybe you could go on the website of a specific retailer you are interested in?  

Anyway, you can't go wrong with Visa or MC.  Take one of those along too.  Push the Amex, but if they don't take it you'll have the second choice.

paris is a city ......and why wouldn't a major tourist attraction like PARIS NOT take american express.....I think so the would gladly take any form of major credit card

Paris the city doesn't take anything...if you mean do retailers, hoteliers, and restauranteurs in Paris accept Amex cards -- some do, more don't.  From what I saw, the places that accept Amex are more upscale (and therefore pricier) than the places that accept Visa/MC or debit cards.  

Make sure to take a secondary form of payment anytime you travel anywhere.

Yes, they do, but you need to make AMEX aware that you are leaving the country and plan on purchasing items there so that they know it isn't a theft!

Am sure there are plenty of places which do - but outlets are not as frequent as in the US.

Get a Visa / Mastercard as well if you are going to Paris.

i had an amex card in France, it is very rare to have one because to get it, you need to have a high revenue. I think there were 50,000 Amex card in France in 2005.

Moreover, the taxes applied to the dealers who accept Amex used to be much higher... let's say 5x higher than Visa. That's why now, even if theses taxes not longer exist, it is rare to find restaurants which accept them. In hotel, this should be correct.

Visa and Mastercard are the best solutions, they are used by tens of millions of french. You can also use your Cirrus to withdraw money at the bankautomat.
