  1. Molasses is produced during the refining of sugar.  Raw honey is considered unrefined.  I've read that if you eat a protein first, and unrefined sugar, such as RAW honey or maple syrup, will break down in the system just fine (but not sure how fast).

I wrote a blog on natural sweeteners vs refined sugar.  There is a link in the blog to natural sweeteners.  It describes how each is made, whether its considered refined or unrefined, and provides measurements for substituting such sweeteners for sugar in baked goods.

  2. Monosaccharides such as fructose found in fruit are the simplest forms of carbohydrates, your body doesn’t have to break them down further so they can, and are, used right away.

Molasses is what’s made into regular sugar (sucrose), which is a disaccharide, a more complex carbohydrate which takes a bit longer to use. I’m not sure but I’d guess molasses has a lot of sucrose in it already (as well as lots of goodies lost when it’s made into processed sugar, such as calcium) so should be used by your body pretty fast, but probably not quite as fast as fruit sugar.

I wouldn't know about honey, I stopped eating it when I found out what happens to bees. They're smoked, crushed and killed off when they're not needed any more. Pretty easy to use something else!

    Hope this helps!
