Soft serve ice cream (sometimes called frozen custard or ice milk) is made of milk or even skim milk instead of cream. So it has less caloric value on that account. The thickeners used instead, such as carrageneen or agar agar have less caloric value than the cream they replace.

But watch the sugar content.
