Without the exact model number it's hard to say for certain, however the directions should be nearly the same between like models with the same brand name.  Here are the instructions for the Uniden 5.8GHz extended range cordless phone w/answering machine model EXAI5680:

Press and hold "Greeting"

You will be prompted by voice to record your outgoing message

When finished, press Greeting again.
