Does the carnivel cruise ship, celebration have a track on it?

Only boats at Disneyland are on tracks   ;-)

I think the Celebration does have a place for running, though their website isn't very clear.

Not really.  I think there's a lame sort-of track around the funnel, but nothing padded or big.  

You might be better off on a treadmill in the gym.

It's kind of an old ship. =/  But the activities and atmosphere are usually fun, especially around Spring Break.

Not sure if this is your first cruise, but you might want to check out the "Know Before You Go" guide.  It covers stuff like packing, how to avoid getting sick, etc...
