Does the stock stereo on an 2005 Cavalier have connections for rca hook ups so I can install an amp and subs?

No, but there is hardware available to take the signals from the speaker wires that run from your stock stereo to your speakers.  It's called a low-level converter, and hooks up to your speaker wires, lowers the power output to a controlled level, and provides a set of RCA jacks to plug into.  Since the signals running to your speakers have been amplified by your stock stereo, you will have to get something that will "clean up" the "noise" in the sound.  Sometimes these line filters come with the converters, sometimes you need to buy a seperate unit.

    The other option is to replace your factory stereo with an aftermarket with built in RCA jacks.  Either way requires some wiring.
