Does this sound good, and how do I substitute real eggs for the egg substitute listed?

I'm going fishing with my honey tomorrow and I'm doing the whole fried chicken, potato salad and coleslaw picnic on the boat thing. This cake is pretty simple and will pack well in a cooler, but I've never tried to substitute real eggs for fake ones. tell me how!!!

SIMPLE MARBLE LOAF CAKE

2c flour

3/4tsp salt

3/4tsp baking powder

1/4tsp baking soda

1c sugar

2Tbs. butter,melted

1c buttermilk

1/2c refrigerated liquid egg substitute

1tsp. vanilla

2Tbs. unsweetened cocoa powder

Directions

Preheat oven to 350.Coat 8 1/2x4 1/2 x2 1/2 loaf panwith cooking spray;dust with flour. In medium bowl,mix first four ingredients. In a large bowl,whisk sugar and butter until blended;whisk in buttermilk,egg substitute and vanilla till smooth. Stir in dry mix.

Combine 2/3c batter with cocoa;reserve Pour remaining batter into pan. Top with spoonfuls of cocoa batter;swirl into vanilla batter using spatula. Bake 50-55 mins. or until pick inserted in center comes out clean. Cool on rack 10 mins. Remove from pan;cool completely. If desired ,garnish with berries.

  1. 1/4 cup liquid egg substitute equals 1 egg, beaten. You'll need two eggs for your recipe.  Your cake sounds great.  You might also include some strong hot coffee for part of the liquid to enhance the flavor.


  2. I work in the dietary dept. of a rest home and when we have to substitute eggs for egg substitute, we use 1 egg for each 1/4c.  Your recipe calls for 1/2c. so use 2 eggs.
