  2. oil can sometimes become rancid if not used right away. Why would you want to re-use it anyway? It's not that expensive, so you dont have to try to conserve. Besides, i think some food flavors remain. I wouldnt want to fry eggs or hash browns with oil that i fried fish in the night before. Splurge a little, use new oil with every meal thats necessary.

    Used cooking oil contains sediment and residues from the materials that was cooked in it. After a period of time it can go rancid.

    In fact all most all cooking oils after a period of time exposed to air will oxidize and go rancid.
