Yes. It changes.

You get another passport.  Keep the old one too. One needs it sometimes.

Yes, you get a brand new passport number, the old passport is cancelled when you are issued a new one

Yes it does.  And if you have any visas that are still valid in the old one, you'll need to take that whenever you travel to those countries, in addition to the new one.
