Left germany recently and like to have a doner every now + then. Am in houston now and used to buy the frozen turkish brand from the german grocery store, but I can't find it here. Does anyone know where I can buy the meat in houston? Also, I wouldn't mind buying a big chunk of it, ya know, like the kind @the kebab houses for a b-day party or event. Is there a distributor of doner meat in the USA?

  1. Check out a Arab or Hispanic butcher for lamb or  even goat, you can mix some medium ground beef in it, dice the lamb or goat and mix some (1/3) in a food processor with 1/2 the beef, process it almost fine, then mix all the 2 meats and add some, black pepper, salt, cumin, paprika, oregano, parsley, garlic (lots), a bit of water and a touch of flour (a tablespoon) make it like a chunky meatloaf, and them wrap it around the skewers, most BBQ supply places will have the long metal ones.

Even Dollar Bargain places do to in packs over 4 so buy 3, lay the meat on a piece of plastic wrap and make like an oblong pattie, place the skewer in th middle add roll it around the skewer, pick it up and manoever it into a sausage shape.

Place them on a tray and then refrig them while you BBQ heats up, I would also get your sides, condiments and pitas or salads ready, the cooked them, for me real charcoal with the char it gives is best but gas is fine, before you grill brush them with a bit of oil to prevent sticking, if you do not want to use the lamb/goat and beef mix, a bit of baby beef or veal is fine to. Good Luck I hope your pleased with the result

I am a former chef and worked internationally, and have had them in Germany, the U.K and in the Iberian penninsula. I also have made them for place I worked in Jamaica and Singapore.

  2. I does not look like there are any doner meat suppliers in the US.  It seams many before you have been searching for the same thing.  Not having heard of doner meat before, but being a huge fan of gyro meat,  it certainly sounds like the same thing, and it seams gyro meat can be found.  Check here..

Here is a place in your area that serves Gyros so you can try it first.

    Doner Meat Recipe

    Doner Kebab Meat Recipe

This is as close as you can get BUT This kebab is difficult to make at home. It is not mine but after personal searching and experimentation THIS IS IT

2 min | 1 min prep | SERVES 30 2 1/2-3  lbs leg of lamb, boned and cut in slices

    1  tablespoon black pepper

    3  lbs ground lamb

    lamb fat

    1  egg

    2-3  tablespoons salt

onions, processed until a liquid-3 cups

    1  cup olive oil

    1  large tomato

Remove any bits of skin and bone from the meat. Cut into serving-size slices, about 1/4 to 1/2 inch thick. Pound with a meat tenderizer or the edge of a heavy saucepan until 1/8 cm. thick. Trim.

Prepare a marinade of onion juice, olive oil, salt and pepper, and soak meat in the marinade overnight.

Spread over each piece of meat the lamb fat, and ground lamb mixed with an egg. Thread pieces of meat on a long skewer, starting with the larger pieces. Trim the chunk of meat on the skewer and add trimmings to the end of skewer. The tomato is put on the skewer whole at the end. The chunk of meat is broiled in the 'Doner Kebab' broiler, made specially for the purpose. The electric rotisseries they are selling today work well.

As the meat turns on the spit and is cooked, i t is sliced off the sides with a sharp knife.
