  1. 1 Chicken

    2 oz (50g) Butter

    4 oz (100g) Mushrooms, sliced

    1 Tin Condensed Mushroom Soup

    1 Clove Garlic, crushed

    Salt & Pepper

    Joint the Chicken and fry in the Butter until golden brown. Arrange pieced in the bottom of a casserole dish. Fry the Mushrooms until soft, add the Soup and the Garlic, stirring over a low heat. Pour the mixture over the Chicken Joints. seasoning and cook at 350F / 180C / Mark 4 for 45 minutes. Serves 4.


  2. I do hon! Try this one - dead simple, and works well with Turkey too!

    Ingredients: (oh this serves 4 by the way..)

    25g/1oz of butter

    75g/3oz sliced mushrooms

    1 small onion (chopped)

    25g/1oz plain flour

    300ml/10 fl oz Chicken stock

    10ml/2 teaspoons lemon juice

    450g/1lb of cooked chicken (chopped)

    225g/8oz long grain rice

    1 egg yolk

    50ml/2 fl oz double cream

    Salt and pepper to taste

    To begin:

    Melt the butter in a large saucepan. Add the mushrooms and onion and fry for 5 minutes. Stir in the flour to make a smooth paste, and then gradually stir in the chicken stock. Bring to the boil, and then simmer for 2 minutes, while constantly stirring the mixture. Add the lemon juice and the cooked chicken and cook for a further 30 minutes. Then mix the egg yolk, cream, salt and pepper together, add 3 tablespoonfuls of the sauce. Then add this back to the chicken (it thickens the sauce beautifully), and stir gently for 2 minutes (careful not to boil it, or it will separate).

    Serve with your rice, and enjoy! :o) xxxx This works just as well with potatoes and nice fresh veg if you fancy a change! :o) xxxxx
