Dried Pasta: Food Fact or Myth?

Rachael Ray (rolling my eyes) mentioned that the "older" dried pasta is the longer it will take to cook even till the al dente stage.

I find this very hard to believe despite the source. So is this true? That a 1 month old box of dried pasta cooks faster than a 3 month or 6 month old box of the same dried pasta??

    I can't see there being any difference.

  3. i'm italian, i have a restaurant, so i answer you very quickly: NO it's the same as the new box of spaghetti (dried spaghetti) than 6 month old (i mean 6 months it's a lot, make sure it's not ruining by the grain worms, watch out, they cause diarea)

    the difference it's in fresh and dried; fresh 5 minutes cooking, dried 12 minutes. that's all
