Dublin: Where to find a consigne near o'connell street?

Will be in Dublin for a few days. Will need to pick bus at 5am to airport. Is there a place downtown where I can leave a bag from 2PM to 5AM?

Most left luggage places are not open during the night.

Why not leave it somewhere til 11pm or so and then get an Aircoach (they run every hour during the night) or a Nitelink and sleep a couple of hours at the airport before check-in?

I think you are out of luck.  I don't know anywhere that will store your bag till 5am.  Busarus doesn't open till 7am.

Also the local bus service doesn't start till 6.30am. looks like a taxi for 25/30 euro.

I think there are lockers at Bus Aras, you might want to phone them and see. Look for the number on www.goldenpages.ie.
