Question:

Dumplings that aren't soggy??

I like dumplings that have some texture to them. One of my friends made the best potatoe dumplings and I failed to get the receipe. I only remember it called for part real and part instant mashed potatoes. Regular dumplings would be great too. Thing is, I've tried 2 different receipes and both of them came out soggy and squishy. I'm looking for something I can bite into, not wring out for a glass of water. Help!!!

  1. JennyP is right, you cannot go wrong with Bisquick.  I add a little poultry seasoning and dried parsley to their recipe.

The main thing to remember when you are cooking your dumplings when covered..do not lift the lid until the specified time... no peaking or your dumplings will not steam properly and will be soggy.

  2. Ok, so I'm not a dumpling expert, but I have to tell you that the best dumplings I've ever tasted came from a recipe on the back of a box of Bisquick!  They're flavorful, fluffy, have a nice texture and are great on beef stew or chicken and dumplings.

You can add grated parmesan or chopped chives or other seasonings to the mix and its just about full-proof.
