Trees enter a dormant state in the fall - the food they produce in late summer is moved into storage in their roots until spring when it provides the energy necessary for them to grow new leaves and start production of their food again.  A comparison in the animal world is a bear that hibernates in the winter - they live off the fat stored on their bodies until spring when they awaken to eat.
