  1. No. "During the weekdays" means Monday through Friday.

    "During the weekday" doesn't really make much sense. Instead, say "on a weekday" or "on Friday".

    I take my lunch at MacDonalds during the weekday -infers that I take lunch every weekday at that place.

    Now..

    I take my lunch at MacDonalds during the weekdays -specifies that I can be seen there at some point during weekdays  but not necessarily on each weekday.

    Its a question of frequency related to different time spans
