  1. There is probably going to be no easy way. For one thing, Dymchurch is only served by the Romney, Hythe & Dymchurch Railway (RH&DR) which is a 15 inch gauge line that has no mainline rail interchange. Looking at a map, your best bet looks like getting to Folkestone by train, catching a bus to Hythe and then getting onto the RH&DR down to Dymchurch from there.

You can get to Folkestone by taking either the XX16 departure from Grove Park up to Waterloo East and then getting the XX56 down to Folkestone Central (takes 1hr 56mins), or the XX21 departure from Grove Park down to Orpington, changing onto the XX40 from Orpington to Tonbridge and then the XX03 to Folkestone Central (takes 1hr 37mins). Buses on the route 10 from Folkestone bus station take 10 minutes to get to Hythe Red Lion Square departing at XX20 from 0820 to 1720 Mondays to Saturdays. Train times on the RH&DR depend on what date you are planning to travel. Might be best to check their website for times.
