Dynamic markings on Sibelius-- Help!!!?

Question

I am composing a piece on Sibelius (free demo/trial version) for my music coursework but so far it's proving to be somewhat nightmarish - I can't make head or tail of it, the manual is rubbish. Does anyone know how to add dynamic/articulation markings (legato, piano, staccato, cresc etc.) on it? Thanks loads :)

 The sound on my sibelius music keeps going even when there is a rest. It keeps going and I cannot stop it.
