I'm looking for some easy recipes for boneless skinless chicken b*****s. I'm just looking to try something other than just baking them or breading them and frying them. Any ideas would be great. Thanks.

  5. Boneless b*****s are one of the greatest things ever, they are sooo versatile!

Simmer in water, then chop and add taco seasoning. Proceed as usual, and you have great chicken tacos.

Cut them in strips, and stir-fry, add frozen stir-fry veggies, garlic & soy sauce, and serve on rice.

Sautee strips with sliced onions & peppers and some salsa, and serve in soft tortillas for fajitas. Top with cheese & sour cream if desired.

Chop the chicken, sautee in a small amount of taco sauce, and put between tortilla layers with black beans and shredded cheese, then bake for easy and delicious quesadillas.

    Marinate & bake in this Teriyaki-flavored mix: 1 c. brown sugar; 2/3 c vinegar; 1/4 c Sprite; 3 T minced garlic; 2 T soy sauce; 1 t black pepper. This is really tasty!

Bake them in a tomato sauce with peppers, mushrooms, and garlic & oregano for a chicken cacciatore dish.

Be creative--chicken b*****s are like a wonder food!

  6. Beacuse it's summer, I like to grill a lot. If you don't have an outdoors grill, you can bake or broil in the oven.

    1. kebabs. Skewer chunks of chicken on a skewer (soaked overnight so it doesn't burn if wood) with either pineapple and onion, OR mushroom, onion, greenpepper.

    2. Pound Chicken flat and place a little bit of ricotta cheese and spinach in the center. Roll up and tie with toothpicks or twine and cook on grill until done

    3. Take a large piece of tinfoil. Place a small amount of dry stuffing mix, some chicken broth, mushrooms, celery, and chicken breast on top. Fold edges up and place over fire.

  8. cordon bleu

4 skinless, boneless chicken breast halves

    1/4 teaspoon salt

    1/8 teaspoon ground black pepper

    6 slices Swiss cheese

    4 slices cooked ham

    1/2 cup seasoned bread crumbs

Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.

Pound chicken b*****s to 1/4 inch thickness.

Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.

Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.

  9. ROTEL CHICKEN

    INGREDIENTS:

    1 pkg Chicken b*****s boneless/skinless

    7 Yellow Squash

2 cans of Rotel (mild for me)

2 pounds of Shredded Cheese (mexi style) ( I usually use a little more because I like to cover the top with mounds of cheese. )

    PREHEAT OVEN to 350 degrees

Peel and Slice Squash into thin rounds. Place in pot and boil until soft.

Boil Chicken until done (when it's white).  You can do this while you're boiling the squash.

Shred done chicken in food processor, or shred by hand. I use my food processor. It's much faster.

Drain the done squash in colander (strainer). Place Squash in 13x9 baking dish and spread evenly.

Spread Shredded Chicken on top of Squash.

Pour the 2 cans of (DRAINED) rotel on top of Chicken and spread evenly.

Cover top with shredded cheese (mexi style)

    Bake for 30 minutes.

    YUM-O!!!!
