Easy Ethnic Food?

I'm looking for any kind, made with chicken, beef, of beans. I don't have expensive things like won ton wraps and tofu or anything like that. Think average kitchen. What do you suggest?

  1. Chk enchiladas: Buy chk breast. Put it in a large pan to boil. Add garlic powder and salt. Let it boil until the chicken is fully cooked. Drain & Shred. Next place dersired amount of tortillas to the side. Add oil to a small frying pan. Heat oil on medium high. Place tortillas in hot oil one by one for about 15 seconds each. Next dip them each in enchilada sauce. Fill the tortillas with the shredded chicken breast and shredded cheese. Roll them up and place them in the oven to bake.


  2. Quick & Easy CHICKEN CURRY:

    Ingredients:

    1 lb chicken pieces, boneless/skinless

    1 large onion, diced

    2 cloves of garlic, finely minced

    1 inch piece of ginger, peeled & finely minced

    1 can of tomato puree (if you use crushed tomatoes, puree them)

    1 tsp ground cumin

    1 tsp turmeric

    1 tsp ground coriander

    1 tsp garam masala

    1/2 red chili powder (to taste)

    salt to taste

    juice of 1 lemon

    oil (veg or canola)

    water as needed (or chicken stock)

    freshly chopped cilantro leaves for garnish

    METHOD:

    In a large deep skillet on medium high heat, add 2 tbsp of oil and saute the onion until slightly browned. Add the ginger & garlic, stir fry for 1-2 minutes and add the spices. Stir fry & let the spices cook out for 3-4 minutes until fragrant. Add the chicken pieces and mix to coat well. Once the chicken has turned opaque, add the tomatoes and a little water to cover.

    Reduce the heat, cover & let simmer 10-12 minutes. The chicken should be fully cooked but tender & juicy. Add lemon juice, adjust the seasonings, garnish & serve

  3. Curried chicken or beef, with potatoes and rice. If u have curry powder available heres what u do.

    Put a put big enough pot for your meat on the fire. For example one chicken. Put 5 - 7 tbspoons of oil in the pot to get hot. Mix two tbspoons of curry powder in 1/4 cup of water with 2 grains of crushed garlic and throw it into the pot when the oil is hot. Be careful it may splash up. Wait till the curry powder is ready to throw in the chicken.(which should be cut up into 1/16) You will know the curry powder is ready when there is no water left and it looks bubbly.

    After throwing in the meat, add some water and let it cook for half hour. Throw in some diced potatoes and give it 20 more minutes over medium fire. Throw in a hot pepper into the pot if u wish when adding the potatoes.

    Serve with steamed rice and enjoy :)

  5. Chinese Chicken Fried Rice

    INGREDIENTS

    1/2 tablespoon sesame oil

    1 onion

    1 1/2 pounds cooked, cubed chicken meat

    2 tablespoons soy sauce

    2 large carrots, diced

    2 stalks celery, chopped

    1 large red bell pepper, diced

    3/4 cup fresh pea pods, halved

    1/2 large green bell pepper, diced

    6 cups cooked white rice

    2 eggs

    1/3 cup soy sauce

    DIRECTIONS

    Heat oil in a large skillet over medium heat. Add onion and saute until soft, then add chicken and 2 tablespoons soy sauce and stir-fry for 5 to 6 minutes.

    Stir in carrots, celery, red bell pepper, pea pods and green bell pepper and stir-fry another 5 minutes. Then add rice and stir thoroughly.

    Finally, stir in scrambled eggs and 1/3 cup soy sauce, heat through and serve hot.

    Voila!!!
