Busy Mom work FT and go to school. ANy easy meals that are quick?? Recipes ur family likes and allows u to still hv time w them. Any ideas would b great

  1. You can make:

    Pita bread with falafel, avocados, & hummus.

    Vegan chili made with black beans, kidney beans, corn, green beans, chili sauce, taco seasoning, tomatoes, green peppers & onions.

    Baked/fried/BBQ tofu, seiten, TVP, or tempeh.

    Cook and fry a large portobello mushroom and make a burger.

    Stir fry and season rice/couscous/quinoa, beans, and vegetables.

    Bean, rice, & veg cheese burrito, taco, or quesadilla.

    Quick casserole, mix your favorite veggies chopped together with olive oil and fry, add nutrional yeast sauce; with vegan margarine mix together with breadcrumbs and put in a cooking dish poor mixed veggies onto it and then cover with more of the breadcrumb mix and top layered with green beans and cook for 10-40m or replace breadcrumbs with pasta of your choice

    Power vegan smoothie with fresh fruits of your liking, plant milk, bananas or tofu, flaxseeds, pumpkin seeds, and maybe a sweetener of your choice; you can also add nuts, spirluna, protein powder, etc

    Quick vegan waffles or pancakes with syrup, vegan butter or vegan cream cheese, and fruit

    Cereal or oatmeal with fortified alternative to milk (such as soy milk, almond, rice, hemp, etc), with nuts and fruits on the side (or mixed in!)

  2. When I need a quick vegetarian meal, I use the morningstar "beef" crumbles with any kind of hamburger helper ("beef" stroganoff is the best). Or the make these fake chicken strips that are really good with any kind of pasta. (Frozen cheese tortellinis with pesto sauce is to die for AND quick!) When I have other things to do around the house, I'll throw some partially cooked pastas in a casserole dish with some sauce, frozen veggies *quick, chik-in strips and bake it. mmmmmm. Now I'm hungry :(

  3. My mom--not a vegetarian--got this recipe book "Lickety-Split Meals" by Zonya Foco and it happens to have a LOT of vegetarian ones. I haven't tried many of them, but here's a couple (both serve 4):

    Cheesy Potato Skillet with Mixed Vegetables (15 mins)

    1 bag frozen mixed vegetables

    4 cups frozen Ore Ida Potatoes O'Brien (hash browns with onions and peppers)

    1/2 cup shredded mozzarella cheese

    2 Tbs grated parmesan cheese

    Pepper to taste

    Heat frozen veggies for 4 minutes in large skillet, in a tsp oil.

    Add potatoes and cook another 6 minutes, stirring frequently.

    Sprinkle the cheeses over the vegetables, turn off heat, cover and let stand one minute.

    White Beans with Tomato, Basil and Parmesan (15 mins)

    1 Tbs oil

    2 cloves garlic, minced

    2 cans Navy, great northern or white kidney beans, rinsed and drained

    1 lg ripe tomato, chopped

    1 tsp dried basil

    1/2 cp grated parmesan cheese

    1 Tbs lemon juice

    Sautee oil and garlic 3 mins.

    Stir in beans, tomato, and basil, cook 7 minutes.

    Mix in cheese and lemon juice just before serving.

    There are lots more, too, ranging from 5 minutes to slow-cooking.

    Also, personally, I am a huge fan of the stir-fry. Just throw a bunch of vegetables in a pan, cook up some rice, and you have a tasty, healthy, quick meal. I use soy sauce and other seasonings, too.

  4. Vegetarian Chili

    In a crock pot, combine the following

    1can kidney beans rinsed

    1 can mixed beans, rinsed

    1 can corn

    1chopped red pepper

    1 chopped yellow pepper

    Couple ribs of chopped celery

    1 jar salsa (use a store brand, Doritos is very sweet)

    2-3 tbsp chili powder

    cook on low all day

    to serve

    dish out, add shredded cheese, sour cream, black olives, shredded lettuce, tortilla chips.
