Easy chicken recipes?

I have lots of organic chicken I bought from WholeFoods and I need to make some meals with them this week....Any good ideas? Thank you

  1. Honey Chicken

    3-4 lbs. chicken parts

    1/2 cup honey

    2 Tbsp. soya sauce

    2 Tbsp. ketchup

    Arrange chicken in a casserole dish.  Mix liquids and pour over chicken.  Roast at 325 for 1 1/2 hrs.  Very easy and very good.

  3. Let make Pan fried Chicken with provencale sauce, Marinate chicken with salt, pepper, olive oil and grill till done.

    Now for sauce chop shallots, chop tomato, chop basil, little dry white wine, butter salt and pepper to taste.

    heat butter in a pan add shallots, cook till brown , add white wine, reduce to half and add tomato and the juice of the chicken . Cook till sauce gets thick and serve the chicken with sauce and herbs.

    put chicken pieces with bones and skin in large sauce pan of water ,

    add peppercorns, bay leaf,chicken stock cubes/powder ,

    simmer till chicken is cooked ,remove chicken from stock and put all in fridge overnight .

    skim fat ,and drain the stock .put in large sauce pan ,add carrots, onions, celery ,any veg of ur choice ,cook till tender ,add shredded chicken meat and egg noodles ,adjust seasoning and serve .

  5. Chicken Enchilada Casserole

    1 – 1 ½ lb boneless chicken, cut into bite size chunks

    1 can cream of mushroom soup

    1 - 8 oz carton sour cream

    1 small can chopped Ortega green chiles

    1 sml package flour tortillas, cut or torn in small pieces

    8 oz jalapeno or regular jack cheese, grated

    Cook chicken in skillet with a little water and ½ tsp garlic salt or powder, until no longer pink Remove and reserve.

    In a bowl combine the next four ingredients, plus 6 oz of the cheese, add the chicken. Mix well and place in greased casserole dish. Top with remaining cheese and bake at

    350 F for 1 hour.

    Serving suggestions: Mexicorn and Mexican rice.

    Quick Chicken Parmesan

    4 Boneless Chicken b*****s, pounded flat

    1 jar Spaghetti Sauce (I use Prego mushroom and garlic)

    3 oz. Mozzarella Cheese, grated

    2 cups Italian Bread Crumbs

    2 oz. Parmesan Cheese

    1/2 tsp garlic salt

    1 egg, plus 1 tbs water, slightly beaten

    Mix Italian breadcrumbs, Parmesan cheese, and garlic salt together in bowl. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 – 15 min each side). Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve. Makes 4 servings.

    Mexican Salsa Chicken

    1/3 cup flour

    1/8 tsp garlic powder

    1/8 tsp paprika

    1/8 tsp chili powder

    4 boneless chicken b*****s, pounded flat

    3 tbs oil

    1 container fresh salsa

    4 oz (1 cup) shredded Monterey Jack or Jalapeno Jack cheese

    Combine first 4 ingredients in shallow dish or ziplock bag. Coat chicken with mixture. Heat oil large skillet over medium high heat. Cook chicken 3-4 minutes on each side or until lightly brown. Reduce heat and pour half the salsa into skillet and spoon some salsa over chicken, cover, simmer for 5 minutes. Add cheese on top of chicken and salsa. Cover until cheese melts. Makes 4 servings.

    Chicken in Champagne Sauce

    4 boneless chicken b*****s

    1 tsp thyme

    1 tsp seasoned salt (Lawry’s)

    1 tsp garlic salt or powder

    6 tbs light margarine or butter

    2/3 cup Asti Spumante or any sweet wine (use the cheapest you can find)

    2 tsp flour (more if needed to thicken)

    1 cup half and half or lowfat milk

    Sprinkle chicken b*****s with all seasonings. Heat butter in frying pan. Brown chicken. Add Asti or wine. Cover pan and simmer about 30- 40 minutes, turning twice, until chicken is tender. Remove chicken and keep warm. Thicken sauce with flour. Stir in half and half and heat sauce. Add chicken to sauce to coat. Makes 4 servings

    Serving suggestions: Serve with boiled red potatoes or mashed potatoes with sauce on top and steamed broccoli.


  6. Chicken & Pasta in sauce.

    Cut chicken breast into cubes.

    Brown in large frying pan

    Add chopped onion & garlic fry till slightly soft

    Add chopped peppers and cook for a few minutes, also your choice of fresh or dried herbs i.e. coriander, tarragon and or oregano.

    Add tin chopped tomatoes and glass of red or white wine (optional)

    Add sliced mushrooms.

    Leave to simmer for 10 - 15 mins.

    Cook pasta in a separate pan.

    When pasta cooked, drain, rinse,  and stir into sauce with a teaspoon of red or green pesto (optional)

    You can also do Chicken breast in a oven proof dish with a tin of condensed Mushroom soup poured over, bake for approx. an hour.

    Serve with you choice of potatoes and Vegetables.

    Chicken thighs/legs cooked in the oven with Garlic clove pushed under the skin and under leg, for about an hour, in possible do in a roasting tin on a rack, with garlic under neath the rack

  7. since they are organic much better if you just grill them with a marination of salt and pepper and a rub of olive oil. organic chicken need not apply any chemical additives so you can taste the goodness of its meat.

    or just stew with your favorite veggies (organic)

    or even for soups just a plain water with salt and pepper  

  8. Arrange after washing and cleaning chicken in a casserole dish. Add lemon juice and salt and refrigerate for 4 hours. Add Campbell's mushroom soup can to it and bake. My kids called it Aunty's chicken and enjoyed it a lot. Variation is choice of soups
